Over the 30 years since Milos opened its doors in Montreal, Costas Spiliadis has been a passionate ambassador for his native land’s cultural riches, introducing countless North Americans to more authentic Greek food, music and art.

A native of Patras, Greece, Costas Spiliadis’s defining ideas about food had their genesis with his mother, herself an outstanding cook. Subsequent travels throughout Greece, experiencing its regional cuisines, confirmed his fundamental insight: The best Greek food is truth (alétheia) — simple, perfect, unadorned.
